The Tequila making process
The distillery takes immense pride in its commitment to traditional production methods, ensuring that each bottle of tequila embodies the essence of authentic Mexican craftsmanship and the flavors of the agave plant.
1. Essence from
the Highlands
Careful selection of agaves aged a minimum of 6 years, ensuring they are fully matured before harvesting.
2. Methodical
Slow Cooking
To achieve the highest quality, the agaves undergo slow cooking. This slow cooking process lasts approximately 18 to 24 hours, allowing for even cooking and the gradual hydrolysis of agave sugars.
3. Ancestral Milling and Distillation
After cooking, the agaves go through a 5-step milling process to extract the must, which is then fermented.
4. Tradition in Every Sip
The distillery uses an exclusive yeast strain for fermentation, and the fermentation room is harmonized with classical music to provide an optimal environment for the yeast to work for over 10 days without rushing the process.
